What is City Chicken and how easy is it to prepare?

City chicken is a unique dish. Traditionally, city chicken was made of both pork and veal. Although at Eckerlin Meats we can custom make a pork-and-veal city chicken, today ours are made strictly using only pork.

City chicken is easy to prepare. Just coat the skewered meat with a little flour or breading, brown them in a skillet, add liquid, and braise the city chicken for about an hour and a half.
